Ingredients:


• 4 large eggs


• 4 small flour or corn tortillas


• 1/2 cup grated cheddar cheese


• 1/4 cup diced onion


• 1/4 cup diced bell pepper (any colour)


• 1/4 cup diced tomato


• 1/4 cup diced jalapeño (optional, for spice)


• 1/4 cup chopped fresh cilantro


• Salt and pepper to taste


• A pair of tablespoons of culinary oil, whether it be vegetable or the exquisite olive oil.


For the Salsa:


• 1 cup diced tomatoes


• 1/4 cup diced onion


• 2 tablespoons chopped fresh cilantro


• 1 tablespoon fresh lime juice


• Salt and pepper to taste


Instructions:


1. Prepare the Salsa:


• In a bowl, combine diced tomatoes, diced onion, chopped cilantro, and fresh lime juice.


• Season with salt and pepper to taste.


• Mix well and set aside to let the flavours meld while you prepare the rest of the tacos.


2. Scramble the Eggs:


• Break the eggs into a mixing bowl and blend them until the egg yolks and egg whites are thoroughly incorporated.


• Heat a skillet over medium-low heat and add 1 tablespoon of oil.


• Once the oil is hot, add diced onion and bell pepper. Saute them for a duration of 2 to 3 minutes, just until they start to become tender.


• Pour the whisked eggs into the skillet and stir continuously as they cook.


• As the eggs begin to set, add the grated cheddar cheese and continue to stir until the eggs are creamy and the cheese is melted.
