Breakfast Burrito with Black Beans, Spinach, and Salsa

Start your day with a nutritious and delicious breakfast burrito featuring black beans, spinach, and salsa. Packed with protein and fibre, this wholesome morning meal provides sustained energy and promotes overall health.

Ingredients:


For the Burrito Filling:


• 1 cup black beans (cooked and drained)


• 1 cup fresh spinach leaves


• 1/2 cup diced tomatoes


• 1/2 cup diced onions


• 1/2 cup diced bell peppers (any colour)


• 1/2 cup shredded cheddar cheese


• 4 large eggs


• Salt and pepper to taste


• 2 tablespoons olive oil


For Assembling:


• 4 large flour tortillas


• Salsa (store-bought or homemade)


• Sour cream (optional)


• Avocado slices (optional)


Instructions:


1.Prepare the Vegetables:


• Warm a single tablespoon of olive oil within a spacious frying pan over medium-level heat.


• Add the diced onions and bell peppers. Cook over medium heat for 2-3 minutes until they begin to tenderise.


2.Add Spinach and Tomatoes:


• Add the fresh spinach leaves to the skillet. Stir until the spinach wilts, which should take about 2 minutes.


• Add the diced tomatoes and cook for another 2 minutes until they soften slightly. Enhance the flavour by adding just the right amount of salt and pepper according to your preferences.


3.Cook the Black Beans:


• In a separate small saucepan, heat the black beans over low heat until they are warmed through.


4.Scramble the Eggs:


• In a mixing bowl, combine the eggs while incorporating a dash of salt and a sprinkle of pepper.


• In the same skillet where you cooked the vegetables, add the remaining 1 tablespoon of olive oil.


• Pour the beaten eggs into the skillet and scramble them until they are cooked to your desired doneness.


5.Assemble the Burritos:


• Warm the flour tortillas in the microwave for about 15 seconds each or in a dry skillet for a few seconds on each side to make them pliable.


• Lay out each tortilla on a clean surface.


• Spoon a portion of the black beans onto the centre of each tortilla.


• Add a portion of the cooked vegetable mixture on top of the beans.


• Sprinkle shredded cheddar cheese over the vegetables.


6.Roll the Burritos:


• Fold in the sides of the tortilla, then fold up the bottom and roll it tightly from the bottom up to create the burrito.


7.Serve:


• Place the seam side down to keep the burrito closed.


• If desired, top the burrito with salsa, a dollop of sour cream, and slices of avocado.


• Serve the breakfast burritos immediately while they are still warm and enjoy!
